PAN-ROASTED FILET MIGNON STUFFED WITH ENGLISH STILTON SERVED WITH POTATO WALNUT CONFIT AND PORT WINE REDUCTION 

  • 1 pound red bliss potatoes, quartered

  • Cracked black pepper

  • Salt

  • 1 tablespoon dried thyme

  • 2 tablespoons olive oil

  • 1 cup veal stock

  • 3 ounces bacon, chopped

  • 1 cup veal stock

  • 2 tablespoon chopped shallots

  • 1 teaspoon chopped garlic

  • 1/2 cup walnut pieces

  • 4- 8-ounce filet mignons

  • 1 cup crumbled Stilton cheese

  • 1/2 cup port wine

  • 1 cup vegetable oil

  • 4 whole shallots, cut into 1/4-inch rings

  • 1/4 cup flour

  • 1 tablespoon chopped parsley

Preheat the oven to 400 degrees. In a mixing bowl, toss the potatoes with thyme and 1 tablespoon olive oil. Season with salt and cracked black pepper. Place the potatoes in an oven-proof sauté pan. Roast the potatoes for 20 minutes or until golden brown. Remove the potatoes from the oven and turn into a mixing bowl. Place the sauté pan on the stove. Over medium-high heat, deglaze the pan with the veal stock. Reduce the stock by half, about 8 minutes. Set the veal reduction aside and keep warm. In a hot sauté pan, render the bacon until crispy, stirring occasionally, about 8 minutes. Stir in the shallots, garlic, and walnuts. Saute for 2 minutes. Remove from the heat. In a mixing bowl, toss the potatoes with the bacon mixture. 

Set the potatoes aside in a warm place.

On the side of each filet make a 2-inch slit forming a pocket. Stuff each pocket with 2 tablespoons of the cheese. Season the filets with salt and cracked black pepper. In oven-proof sauté pan, add the olive oil. When the oil is hot, sear the filets for 2 minutes on each side. Place the pan in the oven and roast the filets for 6 to 7 minutes for medium-rare. Remove from the filets from the pan and set aside.  

Place the sauté pan on the stove. Over medium-high heat, deglaze the pan with the port wine. Reduce the wine by half, about 5 minutes. Pour the vegetable oil in a sauce pan and heat the oil. Dredge the shallots in the flour, coating the shallots completely. Fry the shallots in the hot oil until golden brown, about 2 minutes. Remove from the oil and drain on a paper-lined plate. Season the shallots with salt. To assemble, divide the potatoes by four and mound the potatoes in the center of each plate. Lay each filet on top of the potatoes. Spoon the veal reduction over each filet. Drizzle each plate with the port wine reduction. Garnish each plate with the remaining Stilton cheese, fried shallots and parsley.

Yield: 4 main-course servings
Yes, people, believe it or not, the youngest member of the family has reached Middle School! Our dearest Heather is now attending Corde Madera Middle School in Portola Valley.

The pace is grueling. Up at 7:00 for the little lady, and in the car and on our way no later than 7:30. The ride is a minimum 30-40 minutes depending on traffic, but worth it. As Ms. Lovecchio states, "My new teacher is nice. She let's me bring my books". And that she does. Every day we pack her red backpack (with wheels!) to the brim with all of her favorite books. Lately, her favorites are "Blue's First Book", and her "Parent Trap" book. As you all know, Heather has taken the plunge and leaves her "Big Book" at home. She is now slowing taking it apart, and inserting portions into her other books. We now have several "Big Books"!! Ms. Lovecchio, when asked about what she would like to do when she grows up states, "A Librarian. Then I can help kids find their books". 

Besides that, we are having only "good days", a far cry from the "Sergeant Hulka" teacher (aka Ms. Palmer, booooooo, hisssssss) from last year. She misses her dear friend Emily quite a bit, and hopes to be reunited with her next year.

So, let's "Have a Big Hand for The Little Lady"! "You go girlfriend"!

We Did It!

After looking at over 45 homes in the Camas - Vancouver area and picked out our dream home.  

Can you believe it!  We own our own home.  We are still in a state of shock.

We must say that we feel rather blessed for being 1st time home buyers.  There was absolutely no way that we could have ever afforded a home like this in the Bay Area.

The house affectionately called "The White House" is 4 minutes from my work and 2 blocks away from I-14 and the Columbia river gorge.  Jeff has a 2 block ride to catch public transportation to Beaverton.

Yankees' Win 3rd Straight World Series Championship
The New York Yankees have won their 3rd consecutive World Series Championship.

The boys from the Bronx defeated the Oakland A's, then the Seattle Mariners and New York Mets in a 4-1 series win.

The Runco's Visit Barbados
Vic and Kim Runco spent a few restful days in Barbados.

Barbados was expensive and hot. The diving was fantastic.  Kim pet a puffer fish and saw sea turtles. Kim and Vic dove 4 ship wrecks and 2 coral reefs. Both agree that diving was the best part of the trip.

That's Just My Opinion by me.
I can see it now - the immortal words plastered on the walls of Charlie Brown's, "Work is the curse of the drinking class."

Now I have re-joined the establishment by going back to work - I have joined the First Consumers National Bank team in Beaverton.

Why is it that we can't be paid for staying at home while our clones do all the work for us?  Let's face it guys, our recliners and remotes miss all day long!

Why can't we paid to think deep thoughts?  Why can't we be paid to stay with our families all day?  Or why can't we be like documentary filmmaker Errol Morris?  

Well, that's just my opinion.
